How To Set The Bar With A Manhattan

Chef Michal Schwartz – farm-to-table pioneer, and owner of a number of well-loved Miami establishments – is a fan of bourbon. And to accentuate the flavor of his favorite whiskey, he reinvented the classic Manhattan. In this rendition, featured in his cookbook Michael’s Genuine Food: Down-to-Earth Cooking for People Who Love to Eat, he skips the sweet vermouth, replacing it with the tart sweetness of cherries. To kick the whole thing up a notch, he adds fresh rosemary for a bright and spicy undertone. It’s probably been a while you had a fancy cocktail, so why not treat yourself to something nice?

Bulletproof Manhattan from Michael’s Genuine Food cookbook

What You’ll Need (for 2 cocktails):

  • 4 oz. bourbon 
  • Juice from ½ a lemon
  • Quality jarred or canned cherries in syrup
  • 1 fresh rosemary spring, plus more for garnish

The Process:

  • Strain the cherry syrup into a small pot and add ½ cup of water
  • Add in the rosemary and place on medium heat
  • Simmer for 2-3 minutes, then remove from the heat
  • Allow the rosemary to steep in the cherry syrup as it cools to further infuse the flavor
  • Once cool, put the cherries back in syrup and chill in the refrigerator for 1-2 days
  • Combine the bourbon, lemon juice, and 2 oz. of the cherry syrup in a shaker with ice
  • Shake it up really well to break the ice into shards
  • Strain the  cocktail into chilled glasses
  • Spear a couple of cherries on a rosemary sprig for garnish

Now just sit back, sip, & enjoy.
