Set The Bar With A Mezcal Paloma

Smokey, citrusy, and perfect for summer fridays

Whether or not Summer Fridays will be part of your 2021 end-of-week routine, you can’t escape the fact that summer is coming, and it will occur over the course of 13 Fridays.  And to celebrate this time charge, we’re mixing up a mezcal cocktail that feels fresh and exciting, just like the summer we’re all hoping to have. Don’t let the light pink hue of this cocktail deceive you – while light and refreshing, this beverage isn’t overly sweet and contains a rich depth of flavor. The smoky mezcal is balanced by the tart yet slightly sweet grapefruit and the zing of lime juice, and it finished on a smooth note of oh-so-subtle sweetness (because the last thing you need after a long week is a drink that will give you an immediate hangover). This beverage pairs well with burritos, french fries, and card games with friends.

Fun Fact #1: both mezcal and tequila are made from agave, but tequila can only be made from one species of agave – agave tequilana – mezcal can be produced from up to 50 different species.

Fun Fact #2: tequila is produced by steaming agave in ovens, while the agave for mezcal is usually roasted in underground pits.

Ingredients (for one serving):

  • 2 oz. mezcal 
  • 2 oz. fresh grapefruit juice
  • 2 oz. sparkling water or club soda
  • 1 tbsp. fresh lime juice
  • 1 tsp. Agave nectar or sugar 
  • Coarse salt 
  • Grapefruit wheel
  • Ice 

Process:

  • Pour salt onto a plate
  • Rub rim of glass with grapefruit wheel and dip glass into salt
  • Pour grapefruit juice, lime juice, and sweetener of choice into glass and stir
  • Stir in mezcal
  • Fill glass with ice and top with sparkling water
  • Garnish with grapefruit wheel and enjoy!
