Behind The Counter With Tyler Dabestani

Founder and Owner Of Necessary Purveyor

Some of the best ideas occur while driving down the highway. This was precisely the case for Tyler Dabestani, founder and owner of Miami Beach’s seasonally-minded sandwich and provisions shop, Necessary Purveyor. “I was literally driving through parts of the southeast with my [german shepherd named Rocko]. We’d hit up some of our favorite spots, and I had a thought – a friendly neighborhood sandwich joint. Shortly after, Necessary Purveyor was developed while heading north on I-85,” Tyler tells us. His friendly sandwich shop serves locally-driven fare, like sandwiches, salads, and light dishes that speak to the vibe of  Miami Beach. We sat down with Tyler to learn where he gets his taste for the fresh flavors Miami has to offer.

NBRHD: Tell us your personal story, elevator pitch-style:

TD: “I was born and raised in North Carolina, decided to pursue hospitality in Europe. I’ve been living the SoFlo life ever since.”

NBRHD:  What was your introduction to food and the kitchen?

TD: “I grew up in a household where the kitchen was the most popular area in the home. I was a picky eater growing up but developed a palette for a wide range of cuisine over time. Sandwiches were obviously my go-to when crafting sumthin up!”

NBRHD: What are your foundational sources of inspiration?

TD: “Learning from others I look up to. Listening to the voices around you. Focusing on being better every day!”

NBRHD: What’s your general philosophy around food?

TD: “Be creative, explore different ingredients and tastes. So many different foods with plenty to choose from! Don’t overdo it!”

NBRHD: Tell us the birth story of Necessary Purveyor in a tweet:

TD: “Vibrant and a Bountiful! Somethin out there for everyone!”

NBRHD: How would you describe Necessary Purveyor in three words?

TD: “Approachable. Inviting. Delectable.”

NBRHD: What are the necessary elements of every good sandwich? 

TD: “Bread is king! A kick-ass spread and quality produce!”

NBRHD: Tell us your secret Necessary Purveyor menu order:

TD: “Green Forager with bacon and jalapeños. Cold-ass Topo Chico.”

NBRHD: Favorite sandwich bread?

TD: “Foccacia.”

NBRHD: Can you recommend a playlist to pair with your menu?

TD: “Grateful Dead. Springfield, Ma 1978”

NBRHD: What was the last delivery meal you had? How was it?

TD: “Lucali. The calzone is killer!”

NBRHD: How have you been decompressing lately?

TD: “Running! Mentally my mind is clear and free.”

NBRHD: Where in your home are you spending the most time?

TD: “The couch kicking my feet up with my lovely lady and my lovely dog.”

NBRHD: What’s the last great thing you read, watched, or listened to?

TD: “I listened to Rodney Scott talking about food and whole hog BBQ.”

NBRHD: What is your favorite purchase in this lockdown period that is a non-necessity?

TD:  “Yeti Tundra 65 cooler.”

NBRHD: What are your favorite pantry items and why? Any tips on how to use them? TD: “White Lily Flour. Flaky biscuits.”
